This is my first attempt at gnocchi with Tomato Vodka sauce from scratch. Yup, I made both the sauce and gnocchi from scratch. It was surprisingly good for my first try.

Vodka Sauce:

1 tablespoon butter
1 tablespoon olive oil
1/2 onion, chopped
1 large shallot, chopped
1/4 lb prosciutto
1 (28 ounce) can canned peeled and diced tomatoes
1 cup heavy whipping cream
1/4 cup vodka
1/4 teaspoon crushed red pepper flakes (soak these in vodka)
salt and pepper to taste

Heat oil & butter in skillet, saute chopped up prosciutto, add onions & shallots, lower heat and saute until onions are translucent. Add can of tomatoes, medium heat until most of liquid is gone. Add vodka/red pepper flakes & cream, high heat until desired consistency, salt & pepper to taste.

Gnocchi:

Boil 2 lbs potatos, peel & mash with potato ricer. Add 1 egg, mix quickly to not cook egg. Add a little salt/pepper and a cup of flower, mix until you have a dough. Keep adding flour until dough cannot absorb more, put on lightly flowered counter and knead. Take portion of dough, roll out with your hands into finger size, cut into small pieces. I rolled small pies over back of fork to give ridges, it took friggin’ forever. Boil gnocchi in salted water for 2 minutes until floating, strain and add sauce.
